Le mélange cajun apparaît en Louisiane au XVIIIe siècle, lorsque les colons français du Canada sont chassés par les Anglais.
Ceux ci s’installent alors en Louisiane. Inspirés de la gastronomie française, ils utilisent les aromates et épices disponibles sur place : le mélange que l’on appellera ensuite “Cajun” est né !

Il est composé principalement de paprika, thym, oignon, poivre noir, moutarde, cumin, piment et herbes aromatiques.

Il permet de préparer le Jambalaya, le poulet Cajun, des potatoes, des légumes grillés…
